Sirris of the Sunless Realms personality type is INFP, and I don't remember any points where the PCs specifically said they would rather fight a dragon than a demon. The focus of the encounter was that they were going to enter a dead god's domain and have to fight a dragon, and that this would be their test of faith. It was a fairly standard test of faith, though, so it's difficult to say if the story would have been different if the PCs had been told they would have to fight a demon instead.
In Tiamat's case, I have a couple of ideas.
First, the PCs' god could take the form of a dragon and be the one to attack them. Then, each PC has to make a Fear check (DC 15) or flee (DC 20). If they do flee, Tiamat doesn't attack them, but she does summon a number of demons to attack them while they're running away. If it's the PCs' test of faith, this should convince them that they need to go back immediately and defeat her. If it's not their test of faith, it should be fairly easy for the GM to make this encounter both fun and memorable.
