The name is derived from the word "sopapilla," which is a type of Mexican cornbread that was made at the bakery in La Manzanilla, New Mexico in the late 1800s and early 1900s.
Another reason why the name is in reference to La Manzanilla is because when Tucson's Pima County's sheriff, Jack Peavey, was in charge of the Pima County Sheriff's Department, he was based in La Manzanilla (also known as Chihuahua), and he was responsible for the deaths of Pima County Sheriff's Department Sgt. Gary Hargrave and Deputy Don Aleman, who were killed by a group of armed assassins during a training exercise in Pima County, Arizona.
As a result of the deaths and the subsequent investigation, all of the members of the group were arrested and convicted for conspiracy to commit murder. The name "Sopapilla" was chosen by Sheriff Peavey because it was similar to his nickname "Peavy." However, he also intended it to be a reference to La Manzanilla.
