I was drawn to the company in my first week of job-hunting, when I was invited to take a tour of its production facilities in the Norwegian countryside. A highlight of this tour was a visit to the company’s “milk room,” where fresh raw milk is pumped into stainless steel vats and processed into products like cheese or sour cream. The room is large — like a walk-in refrigerator with a bank of stainless steel vats. The stainless steel containers are filled with fluid and gently bobbing in the fluid are fat globules, liquid and fine, floating on the surface of the fluid. This is raw milk — the creamy white liquid that has been separated from its initial whey by centrifugation and then treated with enzymes to create cheese. The room is quiet, almost eerie, even though it feels like you’re in a living room. This is the stage where the milk is held for up to 24 hours before being processed into cheese.
