However, in the show, the Doctor is an ENTP, which is a type that seems to be more "representative" of the Sontaran race.

That's not quite true. We have seen evidence that the Doctor is an ENTP, though not in the places you mention. We have seen evidence in both stories with the Cybermen, in The Invasion, and in The Tomb of the Cybermen.
