I think that's the only reason we haven't seen him in a more mature role, because he probably has to keep some of his emotions in check.
And I think that's why he doesn't have a girlfriend. He doesn't want to put up with any drama, and he doesn't want to be in a relationship where he has to compromise or make compromises. He's confident about his emotions and what he believes in, and he doesn't need anyone else to confirm it.
As for the sexuality thing, I'm not really sure where you got that from. When we first met him at the beginning of the series, he was straight. He was dating Rebecca and getting ready to propose to her. He didn't even realize that he was gay until after he met Jess, and then Jess made him realize it.
