Saburo personality type is ISTJ, which is the same as Misato. Naturally, Simon is Similar to Shinji. He has the same personality, and they're both stubborn, brave, and loyal.
The whole "Simon doesn't remember anything after the battle with the EVA" is basically a Catch-22. Simon doesn't remember anything because he's gone through a brainwashing process that erased his memory, but he doesn't know why he is brainwashed, since he doesn't remember anything.
Simon becoming an Evangelion pilot was all part of the NERV's plan to make him forget everything that happened during the battle with the EVA
And it worked. He was left with just enough of his memory intact that he could pilot Unit-00, but not enough to tell what happened to him afterwards.
If the manga continues, this could turn into a Sequel Hook.
The TV series will have an entirely new story set sometime after the second movie, where Shinji still can't remember anything about his past. This series will have a new Eva pilot, whose pasts are unknown to him, and who ends up having to pilot Unit-00.
